Fresh Fruit Tarts with Goat Cheese

This recipe was the hit of the party! Fresh, light and not too sweet! Select your favorite fruit or what is fresh at your local farmer's market!





Directions
  •     2 sheets frozen puff pastry (14-oz), thawed
  •     1 ripe, sweet peach, cut into ½ inch wedges
  •     2 cups sorted berries
  •     4 oz goat cheese, softened
  •     2 tablespoons honey
  •  
Instructions
  • Preheat oven to 425 degrees 
  • Cut pastries into  8 inch squares and place on greased baking sheet. 
  • Prick each square all over with a fork. 
  • Spread each square with a spoonful of goat cheese leaving a ½ inch border. 
  • Top each square with fruit.
  • Bake for 20 to 25 minutes, rotating the pan halfway through, or until the pastry is puffed and golden and the peaches are soft. 
  • Drizzle with honey just before serving.
